Les gousses de vanille vertes matures accumulent du 4-O-(3-méthoxy-benzaldéhyde)-?-D-glucoside (glucovanilline) qui, sous l’effet d’une hydrolyse par une ?-glucosidase endogène, libère de la vanilline, le principal composé d’arôme de la vanille. Les répartitions spatiales des composés phénoliques générateurs d’arôme et des enzymes responsables de leur libération (?-glucosidase) et oxydation (peroxydase) sont mal connues. Nous donnons ici des résultats quantitatifs concernant ces trois composantes au regard de l’anatomie de la gousse. De plus, la progression spatiale de l’oxydation est illustrée. Matériel et méthodes. Des gousses de vanille vertes matures ont été analysées pour leurs teneurs en composés phénoliques, et activités ?-glucosidase et peroxydase...

Characterisation of highly polymerised prodelphinidins from skin and flesh of four cashew apple (Anacardium occidentale L.) genotypes Inra

Tannins were extracted by acetone/water 60:40 from skin and flesh of four cashew apple genotypes from Brazil and Benin (West Africa), and separated from monomeric phenols. Tannins were submitted to acid-catalysed degradation in the presence of phloroglucinol and the products were analysed by HPLC-DAD/ESI-MS. Both skin and flesh tannins contained high percentages of (-)-epigallocatechin and (-)epigallocatechin-O-gallate, followed by minor quantities of (-)-epicatechin and (-)-epicatechin-3-O-gallate; 100% of the compounds were the 23-cis configuration. Skin tannins were half as galloylated (similar to 20%) than flesh tannins (similar to 40%). Their weight-average molecular weight (M-w) was high

Monomeric phenols of cashew apple (Anacardium occidentale L.) Inra

Monomeric phenols were extracted by acetone/water (60:40) from the skin and flesh of four cashew apple genotypes from Brazil and Benin (West Africa), purified by absorption chromatography and subjected to HPLC-DAD/ESI-MS analysis. Skins were found much richer than fleshes in simple phenolics. Flavonol glycosides were dominant with myricetin and quercetin hexosides (2 of each), pentosides (3 of each), and rhamnosides as majorcompounds. Anthocyanidin glycosides were detected in skins from the two scarlet and orange pigmented genotypes as peonidin, petunidin and cyanidin 3-O-hexosides, and were absent from fleshes

Predominant expression of diploid mandarin leaf Proteome in two citrus mandarin-derived somatic allotetraploid hybrids Inra

Fusion of citrus diploid parental protoplasts generates allotetraploid hybrids which do not retain their parental traits with regard to leaf aroma compound biosynthesis. The aim of this study was thus to examine hybrid leaf proteomes in comparison with their parents. Leaf soluble proteins from two citrus allotetraploid hybrids ( mandarin + lime and mandarin + kumquat) and their diploid parents ( mandarin, lime, and kumquat) were submitted to 2-D gel electrophoresis. Leaf proteome maps of the tetraploid hybrids were compared with those of their parents on the basis of the presence/absence of spots and of their spot relative volumes. The two allotetraploid hybrid maps were found closer to that of their mandarin parent than to those of their nonmandarin...

Studies on a bittle stem mutant of rice (Oriza sativa L.); characterization of lignin fractions, associated with phenolic acids and polysaccharides from rice stem Inra

On a caractérisé par analyses chimiques des fractions de lignine, les acides p-coumariques, féruliques et les polyosides associés, qui ont été isolés de la paille d’un cultivar de riz « Balilla 28 » et d’un de ses mutants à tige cassante. Des différences significatives ont été observées entre les deux types de riz pour les teneurs en lignines (Klason, au bromure d’acétyle et insoluble dans les acides), en esters et ethers d’acides phénoliques, en polyosides hemicellulosiques et cellulosiques ainsi que pour les rendements d’extraction des fractions de lignine et d’hydrolyse par des polyosidases. Le caractère cassant des tiges du mutant ne peut donc pas être simplement mis en relation avec les variations de composition chimique d’un constituant...
