The objective of this work was to evaluate bioactive compounds and antioxidant activity of the fruit of strawberry-guava genotypes during maturation, and identify the characteristics that influenced the genetic variability. The fruits were harvested from 15 naturally-occurring genotypes in Areia, Paraíba, Brazil, at the following stages of maturation: Completely Green; Start of Yellow Coloration; Mainly Yellow Coloration and Completely Yellow. During maturation, the ascorbic acid content increased as the chlorophyll and yellow flavonoids were reduced. Antioxidant activity increased with advancing maturity, being greater for the P1, P4, P6, P7, P14 and P15 genotypes. Yellow mombin is a fruit tree that grows spontaneously in the Semi-Arid Northeastern Brazil. Its fruits are still extractively exploited. The pulp of yellow mombin fruit stands out regarding the commercial aspect due to the characteristic flavor and aroma felt when consumed in diverse ways. This study aimed to evaluate the presence of bioactive compounds, total extractable polyphenols, and antioxidant activity of yellow mombin fruits (Spondias mombin, L.), from clone and ungrafted genotypes. Abstract The aim of this work was to evaluate the effect of jackfruit seed starch-based (S) coatings, added to chitosan and alginate on the physiology and maintenance of quality of cold stored ‘Paluma’ guavas, followed by transfer to the room condition. The design was the completely randomized, in a 4x2 factorial scheme, in 4 replications, with 4 coatings (dispersion of S - 4%; S 2% + chitosan - 2% (SC); S - 2% + alginate - 2% (SA); and the uncoated control), in 2 environments (refrigerated (10±2 °C e 80±2% RH) with transfer to room condition (25±3 °C e 75±4% HR)), on the 16th and 20th day of cold storage. Uvas 'Isabel' foram tratadas após a colheita com cloreto de cálcio (CaCl2) e submetidas a atmosfera modificada para avaliação da manutenção de sua qualidade durante o armazenamento, a 12±1 ºC e 85±2% de UR. O experimento foi conduzido em delineamento inteiramente casualizado, em esquema fatorial 5 x 2 x 5, com 3 repetições, sendo cinco doses de CaCl2 (0,0; 0,5; 1,0; 2,0 e 4,0%), dois tipos de atmosfera [ambiente e modificada (AM)] e cinco períodos, durante o armazenamento refrigerado. As avaliações foram acidez titulável (AT), sólidos solúveis (SS), relação SS/AT, pH, ácido ascórbico, incidência de podridão, perda de massa, aparência do engaço e índice de degrana.
