ABSTRACT The aim of this paper was to analyze the drying kinetics, test the Akaike information criterion (AIC) and Schwarz’s Bayesian information criterion (BIC) in the selection of models, determine the effective diffusivity and activation energy of the crushed mass of ‘jambu’ leaves for different conditions of temperature and layer thicknesses. The experiment was carried out at the Food Laboratory of the Brazilian Agricultural Research Corporation (Embrapa) in Macapá-AP. Drying was carried out in air circulation oven with speed of 1.0 m s-1 at various temperatures (60, 70 and 80 ºC) and layer thicknesses (0.005 and 0.010 m). Mosquitoes, such as Aedes aegypti and Culex quinquefasciatus, are important vectors of diseases, such as dengue fever, chikungunya fever, Zika virus, and filariasis, and these diseases are public health problems. The present study was carried out to evaluate the larvicidal activity of the hydroethanolic extract from leaves of Acmella oleracea leaves against 3rd instar larvae of the Ae. aegypti dengue vector and the Cx. quinquefasciatus filariasis vector. The hydroethanolic extract caused significant mortality in Ae. aegypti and Cx. quinquefasciatus. After 24 h of exposure to the extract, it was possible to establish the LC50 values for the extract: 11.41 ppm for Ae. aegypti and LC50 32.40 ppm for Cx. quinquefasciatus. Abstract The aim of this study was to evaluate the microbiological and sensory quality of the Jambu (Acmella oleracea L.) in natura and dried by cold air, and the determination of its drying curve. The microbiological analysis were performed to Salmonella spp, the coagulase-positive Staphylococcus, and coliforms in the both Jambu samples, at 45 °C. Tacacá, the typical food dish of Pará state, Brazil, has showed good consumer global acceptance in the sensory evaluation of Jambu in natura (score of 8.00 ± 1.46) and dried (score of 8.67 ± 0.66).
