No Brasil, a produção e o consumo de suco de uva vem crescendo nos últimos anos, sendo realizada com o uso de uma matriz diversificada de cultivares de uvas do tipo americano. Esta base inclui variedades tradicionais e suas mutações precoces, além de novas cultivares brasileiras, criadas para contribuir para a solução de demandas do segmento de sucos de uva. La variabilidad del color de grano en 114 poblaciones criollas de maíz se clasificó en seis grupos, en el ciclo agrícola PV-2003. Se seleccionaron seis poblaciones, una del blanco, una del amarillo, una del rojo (rojo-2), dos del azul (azul-1 y azul-2) y una del púrpura (rojo-1), para establecer un sistema de cruzas dialélicas en el ciclo agrícola PV-2004. En la F1 semilla de las cruzas hubo diferencias entre progenitores, en la cantidad de antocianinas y su distribución en el pericarpio y en la capa de aleurona. Análise e identificação das antocianinas de couve rôxa (Brassica spp.) IPB - Escola Superior Agrária

A couve rôxa é uma espécie comestível com uma composição em antocianinas rica e complexa. Sabe-se que contem antocianinas poliglicosiladas, aciladas com um ou mesmo dois grupos acilo aromáticos, nomeadamente com ácidos coumárico e caféico. Este padrão de acilação é particularmente interessante, porque confere estabilidade às antocianinas e aumenta o seu potencial de utilização em aplicações famacêuticas, alimentares e cosméticas. Este estudo tem por objectivo determinar a estrutura das antocianinas de variedades de couve rôxa cultivadas em Portugal, com vista ao seu aproveitamento industrial.

Anthocyanin pigments in strawberry IPB - Escola Superior Agrária

The anthocyanin composition was analysed in strawberry fruits from five different cultivars (cv. Eris, Oso Grande, Carisma, Tudnew and Camarosa). Twenty-five defined anthocyanin pigments were detected, most of them containing Pelargonidin (Pg) as aglycone; some cyanidin (Cy) derivatives were also found. Glucose and rutinose were the usual substituting sugars, although arabinose and rhamnose were also tentatively identified; some minor anthocyanins showed acylation with aliphatic acids. Anthocyanin stability: a chemometrical approach IPB - Escola Superior Agrária

The stability of cyanidin 3-glucoside towards five different factors (pH, anthocyanin concentration, sodium chloride concentration, ascorbic acid concentration, Oxygen) was studied during 60 days storage at room temperature using a 2^4-1 reduced factorial design. The influence of each individual parameter on anthocyanin stability was found to vary as a function of time. Sodium chloride and ascorbic acid were, respectively, the variables most contributing to and against anthocyanin stability. Results suggest there may be some degree of interaction between anthocyanin/ascorbic acid, and between pH/Oxygen, affecting anthocyanin degradation.

Anthocyanin trisaccharides in blue berries of Vaccinium padifolium IPB - Escola Superior Agrária

Delphinidin 3-O-alfa-rhamnoside, malvidin 3-O-(6''-O-alfa-rhamnopyranosyl-beta-glucopyranoside) and the 3-O-(6''-O-alfa-rhamnopyranosyl-2''-O-beta-xylopyranosyl-beta-glucopyranosides) of cyanidin, petunidin and peonidin were isolated by various chromatographic techniques from the edible berries of Vaccinium padifolium. Their complete structures were elucidated mainly by one- and two-dimensional nuclear magnetic resonance spectroscopy. Together they account for 7% of the anthocyanin content in this species. No anthocyanidin 3-triglycoside, 3-rutinoside or 3-rhamnoside had previously been found in the genus Vaccinium. The 3-O-(6''-O-alfa- rhamnopyranosyl-2''-O-beta-xylopyranosyl-beta-glucopyranosides) of petunidin and peonidin are novel compounds.

Anthocyanins are secondary plant metabolites responsible for the blue, purple, and red color of many plant tissues. The phenolic structure of anthocyanins conveys marked antioxidant activity in model systems via donation of electrons or hydrogen atoms from hydroxyl moieties to free radicals. Dietary intakes of anthocyanins may exceed 200 mg/day, however, little is known about their antioxidant potency in vivo. Consequently, the aim of this study was to establish whether anthocyanins could act as putative antioxidant micronutrients. Anthocyanins from pomegranate (Punica granatum L.) IPB - Escola Superior Agrária

The anthocyanin contents in the fruits from three cultivars of Punica granatum L. (asseria, mollar and negral) was studied. Six anthocyanins were isolated from the red seeds of pomegranate fruits using a combination of Sephadex LH-20 column chromatography and reverse-phase semi-preparative HPLC. On the basis of chromatographic and spectroscopic techniques, they were identified as the 3-monoglucosides and 3,5-diglucosides of delphinidin, cyanidin and pelargonidin. Anthocyanins in blue berries of Vaccinium padifolium IPB - Escola Superior Agrária

Twenty anthocyanins were isolated from the extract of the edible blue berries of Vaccinium padifolium (Uveira) by a combination of chromatographic techniques. Mainly on the basis of nuclear magnetic resonance techniques (1H, COSY, TOCSY, HSQC, HMBC, SEFT) they were identified as the 3-O-beta-glucopyranosides, 3-O-beta-galactopyranosides, 3-O-beta-arabinopyranosides and 3-O-sambubiosides (2'-O-beta-xylopyranosyl-O-beta-glucopyranosides) of delphinidin, cyanidin, petunidin,malvidin and peonidin. Anthocyanidin disaccharides have not been identified in the genus Vaccinium previously, and the 3-sambubiosides of peonidin, petunidin and malvidin are novel compounds.

We evaluated the genotype and maturity effects on antioxidant activity and phenolic compounds of whole, skin and pulp fruits from three highbush blueberry cultivare (cv. Brigitta, cv. Bluegold and cv. Legacy) grown in southern Chile. Total antioxidant activity (TAA) in ripe fruits varied among the cultivare in the order Legacy > Brigitta > Bluegold. We found that TAA in unripe green and fully ripe fruits was high and similar between them, whereas the lowest levels were found in intermediate ripe fruits. The same trend was observed for fruit total phenolic content. Antioxidant properties and color of Hibiscus sabdariffa extracts Ciencia e Investigación Agraria

Liquid extracts of dried Roselle (Hibiscus sabdariffa) calyces obtained using ethanol:water (50:50 and 70:30%, v/v), water, ethanol:1.5 N HCl (85:25%, v/v), and ethanol (96%) to evaluate selected antioxidant characteristics (phenolic compounds and antioxidant capacity), color parameters (L, a, and b), and anthocyanins (delphinidin-3-O-sambubioside, delphinidin-3-O-glucoside (myrtillin), and cyanidin-3-O-sambubioside) by high performance liquid chromatography (HPLC). The total monomeric anthocyanin content was also assessed using the differential pH technique. The objective of this work was to evaluate the bioactive compounds, antioxidant activity, and physicochemical characteristics of dovyalis fruit to obtain technological knowledge about this fruit when grown under the conditions found in the municipality of Marechal Cândido Rondon, Paraná State, Brazil. Dovyalis fruits from the State University of Western Parana, which was established in 2012, were harvested in March 2016. Dovyalis fruits were collected from several plants and were divided among three lots. Eugenia brasiliensis Lam., locally known as Grumixama, is a species of Myrtaceae commercially underexploited in Brazil. The study was performed in order to identify and quantify, by high performance liquid chromatography, bioactive compounds such as vitamin C, carotenoids, anthocyanins, flavonoids and phenolic acids in the fruits of this species. The vitamin C content in the edible part was 18.75 mg.100 g-1, classifying this fruit as rich in this bioactive compound. Eight carotenoids were identified and quantified, the main one was Beta-cryptoxanthin with a content of 22.3 µg.g-1, sufficiently high to consider this fruit as a new source of this carotenoid. Also, 4837.21 mg.100 g-1 of the anthocyanins were obtained in the freeze-dried fruit peels....
