ABSTRACT In this study, to increase the preservation of phenolic bioactive compounds and antioxidant activity in blueberry pulp, heat treatment associated with addition of xanthan gum was used. A commercial mixture of blueberries (Powerblue, Climax and Bluegen cultivars) was added with 0.08% (w/w) citric acid and subjected to heat treatment by direct heating until 90 °C in conventional open pan (OP) and by direct application of steam (AS); both with and without the addition of xanthan pruni (OPX and ASX), followed by pulping. Annual Variations in the Anthocyanin Contents of Blueberry Fruit Grown in Hokkaido OAK

アントシアニンを多く含有する果物は、健康機能性や色素作用により、非常に高く評価されている。2003 年の冷害年を含む2002~2004 年の摘期に収穫された6 品種の粒大の異なるブルーベリー果実を用いて、それらに含まれるアントシアニン含量を比較検討した。収穫年度により、果実重量あたりのアントシアニン含量は顕著に異なっていた。また、小~中粒果実 (ウェイマウス、ノースランド、ジューン、パトリオット)のアントシアニン含量は、栽培環境に影響を受けにくいが、大粒果実 (ハーバート、ブルーレイ)のそれは栽培環境に影響を受け易いことが示唆された。特に冷害年である2003年のノースランド果実のアントシアニンおよびポリフェノール含量は、他年度のそれらよりも顕著に高く、低温環境においてアントシアニン合成が増加する特徴を持っていると推定された。また、2004年、5 月と6 月の平均気温が長沼町よりも若干低い砂原町で生育したブルーベリー果実の粒大は小さかったが、果実100g 当りのアントシアニン量は高かった。今後、粒大が大きく、アントシアニン含量の高い品種の選抜・育成が期待される。

Assessing Consumer Willingness to Pay for Value-Added Blueberry Products Using a Payment Card Survey AgEcon

This study offers insights on consumer acceptance and willingness to pay for three value-added blueberry products. A modified payment card approach was used. The analytical framework adopted allows the researcher to attach straightforward economic interpretation to the estimated impacts of willingness to pay factors. Results show consumer socio-economic characteristics are important determinants but play different roles depending on the products. Information on health benefits may also be important. However, it is found that outside information or consumer self-stated awareness of blueberries’ health benefits have different impacts. These impacts may function as substitutes rather than complements to each other.

Characterization of blueberry cultivar ‘climax’ Biological Sciences

  The objective of this work was to characterize the blueberry (Vaccinium spp.) cultivar Climax, Rabbiteye group (Vaccinium ashei Reade). In order to achieve that, a survey with blueberry plants (cultivar Climax), in full production, was conducted during the 2012/13 and 2013/14 seasons in the mesoregion of Pelotas, Rio Grande do Sul State, Brazil. Data regarding the distribution of flower and vegetative buds on branches of two lengths (long and short) was collected. Another evaluation, considering three positions of flower buds in the branch (apical, medial and basal), the number of flower primordia, open flowers and fruits formed was performed. The objectives of this study were to physicochemically characterize and determine the antioxidant activities and anthocyanin contents of organic Rabbiteye blueberries grown in Southern Brazil and its derived products, in order to investigate the utility of food processing wastes as raw materials for developing products with beneficial health properties. The antioxidant capacity of the blueberries was superior to that of other fruits and juices. The pomace exhibited high activity, albeit lower than that of the fruit, while the flour and the dried blueberries lost 66% and 46% of the original antioxidant activity, respectively. The present study examined the inactivation effect of ultraviolet (UV) light on the conidia of Botrytis cinerea Cladosporium cladosporioides, C. herbarum and Pestalotiopsis clavispora, common pathogens of blueberry (Vaccinium corymbosum), often found as epiphytes. The fungi were grown at 20°C in acidified potato dextrose agar (APDA) in the dark; conidial suspensions (10(6) conidia mL-1) were placed the bottom of 5 cm glass Petri plates with a maximum height of 0.5 mm. Kinetic Study of Convective Drying of Blueberry Variety O’neil (Vaccinium corymbosum L.) Chilean J. Agric. Res.

The aim of this research was to study and to model the drying kinetics of the blueberry Vaccinium corymbosum L.) at three temperatures (60, 70 and 80 ºC) with an airflow of 2.0 ± 0.2 m s-1. Modeling of the desorption isotherm was carried out with the GAB (Guggenheim, Anderson and de Boer) equation, showing a good fit to experimental moisture data, giving as a result a monolayer moisture level of 0.084 g water g-1 dm. Newton, Henderson-Pabis, Page, Modified Page and Logarithmic mathematical models were applied in the study and in the modeling of the drying kinetics of this fruit. Kinetic parameters k of each model showed dependence on temperature, and were evaluated by an Arrhenius-type equation, with an activation energy of between 36.2 and 54.5 kJ mol-1....

Phenolic compounds and antioxidant activity of blueberry cultivars grown in Brazil Ciênc. Tecnol. Aliment.

The aim of this study was to evaluate the content of the phenolic compounds and anthocyanins and the antioxidant activity of blueberry (Vaccinium sp.) cultivars grown in Brazil. The Folin-Ciocalteau method was applied in order to quantify the phenolic compounds and ABTS, DPPH, FRAP, and β-carotene/linoleic acid methods were applied in order to evaluated antioxidant activity. The phenolic compounds content ranged from 274.48 to 694.60 mg GAE.100 g-1 of fresh weight (FW). Anthocyanins content ranged from 40.62 to 378.31 mg.100 g-1 FW for Bluecrop and Tifblue cultivars, respectively. El arándano azul (Vaccinium ashei Reade) es un producto altamente perecedero, por ello es necesario implementar tecnologías postcosecha que aumenten la vida de anaquel y conserven las propiedades nutrimentales. Dentro de éstas tecnologías se encuentra la luz UV-C (254 nm) que ha sido utilizada en los últimos años en productos hortofrutícolas con la finalidad de reducir la incidencia de microorganismos patógenos y aumentar contenido de fenoles totales. En este estudio, se utilizaron frutos de arándano azul frescos de huertas comerciales de Zacatlán, Puebla, México, que fueron sometidos a tratamientos con luz UV-C en dosis de 1, 3 y 5 kJ m-2 y almacenados por 9 días a temperatura de 24 ºC (60 % de HR) y 4 ºC (80 % de HR) para evaluar la calidad organoléptica...
