Arcobacter butzleri: first isolation report from chicken carcasses in costa rica BJM

Arcobacter butzleri isolation from chicken carcasses in Costa Rica is reported for the first time. The isolated strains (P and R) were presumptively identified by their phenotypic characteristics. Definitive identification was made using a multiplex PCR assay for the simultaneous detection and identification of Arcobacter butzleri, Arcobacter cryaerophilus and Arcobacter skirrowii. These first isolations indicate the necessity of further investigation about the prevalence, distribution, ecology and interactions with human beings of this and other Arcobacter species.

Detection of Listeria species in refrigerated chicken carcasses using Clearview tm and a modified conventional culture method BJM

The occurence of Listeria species in refrigerated chicken carcasses was evaluated, comparing the conventional culture methodology of FDA, modified by the introduction of a secondary enrichment step prior plating, and the ClearviewTM rapid method (Oxoid, UK Ltd). Forty-eight refrigerated whole chicken carcasses purchased from supermarkets in Florianópolis, SC, Brazil, were analysed. Listeria species occured in 21 (43.7%) samples. Using the Clearview method, 17 (35.4%) samples were positive for Listeria species. Of these isolates, 11 (23%) were L. monocytogenes, 4 (8.3%) L. innocua, 1 (2.1%) L. welshimeri and 1 (2.1%) L. seeligeri. Using the conventional culture methodology of FDA (with modifications), 14 (29.2%) samples were positive for Listeria species....

Abstract Cooling of carcasses using water immersion is the most used process in the poultry industry. In this stage, besides the reduction of temperature, water absorption in the carcasses occurs and, consequently, in the chicken cuts, which are monitored by the companies and supervised by the Ministry of Agriculture, Livestock, and Supply of Brazil, which establishes water absorption limits. The objective of this work was to evaluate the process capacity analysis tool to analyze the water absorption capacity by chicken carcasses during precooling, based on the absorption indexes obtained on an industrial scale, by the analysis of 720 carcasses.
