The dissolved oxygen in seawater has steadily declined in many coastal marine ecosystems in the last 50 years because of global warming and increasing coastal human activities. This decrease in oxygen in seawater causes episodes of hypoxia increasingly frequent and severe in coastal and estuarine areas. Some organisms may escape these environmental constraints by migration or dispersion. Others, with limited swimming capabilities must implement physiological regulation (phenotypic plasticity) to enable them to adapt and survive. Contribution à l'étude de l'influence de la température sur la gamétogenèse de l'huître perlière Pinctada margaritifera (Linné, 1758) en conditionnement ArchiMer

L'industrie de la perle nmre étant florissante en Polynésie française, l'aquaculture de l'huître perlière Pinctada margaritifera (Linné, 1758) suscite de nombreuses recherches. L'objectif de cette étude était d'observer le contrôle qu'exerce la température sur la gamétogenèse de la nacre et de voir s'il était possible de synchroniser, grâce à ce paramètre, la maturité des individus en laboratoire. Les variations de températures annuelles observées dans le milieu naturel ont été reproduites sur huit semaines. Régulièrement, des lots de nacres ont été sacrifiés, plusieurs variables biométriques ont été mesurées et l'analyse histologique des gonades a permis d'identifier le stade de maturité. At the end of the 1980s, after two decades of aquaculture research in molluscs, Ifremer initiated its first genetic studies. These new studies quickly revealed the limits of knowledge in aquaculture, particularly in terms of controlling oyster reproduction. This presentation attempts to summarize the available information on genetics in aquaculture. In particular, breeding practices in the 1980s involved populations of broodstock, while genetics requires modern techniques where individuals, not just populations, can be identified. The study of maturation and spawning of the oyster is part of a research program to investigate the summer mortalities of the oysters, Crassostrea gigas in Marennes-Oléron Bay. Four maturity stages were simultaneously obtained by diet and thermal conditioning (immature, low maturation, mature and post-spawning stages). Measurements of clearance, filtration, absorption and respiration rates allowed a calculation of the scope for growth and hence an estimation of the oyster's energetic budget at various maturity stages. Male and female oysters had similar physiological responses. The filtration rate ranged from 2.4 to 2.6 1.h(-1) at the early stages of maturation and decreased to 1.8 1.h.' during the maturity stage. Marinade is a light pickling brine, eventually spiced or sugared, acidified with vinegar or other allowed organic acid. Marinades are half-preserved food that do not have undergo a preliminary treatment in order to eliminate all micro-organisms. The principes of marinading, the importance of sea-products quality, their acidification , and the subsequent pasteurization are explained in this book. Some examples of industrial recipes are given. Legal recommendations are given as annexes.
