O desafio de ampliação do mercado do leite de cabra tem estimulado ações de pesquisa, desenvolvimento e inovação para desenvolvimento de alimentos diferenciados. Uma das alternativas é a produção de lácteos com alto teor de ácido linoleico conjugado (CLA) e alegação funcional. O presente trabalho sintetiza os achados de pesquisa em rede, envolvendo uma equipe multidisciplinar de pesquisadores com o objetivo de desenvolver bases para a produção de alimento lácteo caprino com alto teor em CLA e alegação funcional. Objective: To investigate the effects of lipids from goat milk containing conjugated linoleic acids on body weight and reflex ontogeny of neonatal rats treated during the prenatal and suckling periods. Methods: Three groups were studied: soybean oil (S), coconut oil (C), and goat milk lipids (GM). Reflex maturation (palm grasp, righting reflex, cliff avoidance, vibrissae placing, negative geotaxis, auditory startle, and free-fall righting) as well as body weight evolution were recorded during lactation. Fatty acid (FA) content affects the sensorial and nutritional value of meat and plays a significant role in biological processes such as adipogenesis and immune response. The changes in the concentration of trans-vaccenic (C18:1t-11) and rumenic (C18:2c-9,t-11) acids in the milk from cows grazing on Pennisetum clandestinum, fed a supplement containing palm oil, rice bran or whole cottonseed were evaluated. To analyze the effect of conjugated linoleic acid (CLA) on the meat of pigs (0,1%) and three crude protein (CP) levels (nursery: 20.5, 16.0, 14.5%; growing: 16, 14.5, 11.5%; and finishing: 14.0, 12.5, 11% CP), studies were conducted with 36 hybrid (Yorkshire×Landrace×Duroc) barrows (17.3-83.5 kg), which were individually penned and allotted in a completely randomized design in a factorial (2×3) arrangement for 84 d. The analysis by phases indicated that CP level affected some variables. Abstract: Goat milk is source of different lipids, including conjugated linoleic acid (CLA). CLA reduces body fat and protect against cardiovascular diseases. In the present study fat from goat milk naturally enriched with CLA was used. Male Wistar rats were divided into three groups that received during a 10 week diet with different lipid sources: soybean oil (CON), coconut oil (CO) and goat milk fat naturally enriched with CLA (GM-CLA). The objective in this study was to determine growth, carcass characteristics, chemical composition and fatty acid profile of the longissimus dorsi of crossbred Boer × Saanen kids fed castor oil. Twenty-four kids (12 males and 12 females) were assigned in a randomized complete block design with two treatments and twelve replications.
