Fatty acids omega--3 and omega--6 composition and specially DHA were determined in freeze-dried chicken embryo eggs with pre-determined incubation periods. Fertile and embryo eggs presented palmitic (23.18 + 0.54%), stearic (7.70 + 0.28%), palmitoleic (3.00 + 0.19%), oleic (36.28 + 0.58%), linoleic (22.18 + 0.34%), linolenic (1.08 + 0.04%), arachidonic (2.04 + 0.03%), docosahexaenoic (0.91 + 0.03%), total omega-3 acids (2.26 + 0.10%) and total omega-6 acids (24.62 + 0.33%). Análises experimentais foram realizadas objetivando a composição quantitativa dos ácidos graxos Eicosapentaenóico (EPA) e Docosahexaenóico (DHA), em diferentes partes do corpo de espécies de peixes marinhos da costa brasileira (atum, bonito, olho de boi, cavalinha, sardinha e serra). Os teores de EPA e DHA foram analisados em duas partes distintas: olho (órbita ocular e material gorduroso da cavidade ocular) e filés, sendo significativas as diferenças entre as mesmas. Background: Malate involves in the citrate/malate and transhydrogenase cycles to provide precursors for docosahexaenoic acid (DHA) synthesis. The optimal strategy was investigated for increasing DHA production in Schizochytrium species during fermentation. Results: DHA production increased by 47% and reached 5.51 g/L when 4 g malate/L was added during the rapid lipid accumulation stage in shake-flasks culture. Inducing effects of malate was further investigated through the analysis of three kinetic parameters, including specificcell growth rate(μ), specific glucose consumption rate (qGlu)and DHA formation rate (qDHA). Abstract The buffalo’s reproductive seasonality determines the decrease in milk and cheese production generating economic losses on the production system. Among various food process, we find the spray-dryer as an essential tool which helps food conservation. We achieved the milk powder in three replicates and each repetition processed 10 L of buffalo milk. After obtaining the final product, three samples (200 g) were packaged for each evaluated storage time (0, 30, 60, 90, 120 and 150 days at room temperature). The synthetic pathways responsible for the production of the polyunsaturated fatty acids 22:6n-3 and 20:5n-3 were studied in the Dinophyte Alexandrium minutum. The purpose of this work was to follow the progressive incorporation of an isotopic label (13CO2) into 11 fatty acids to better understand the fatty acid synthesis pathways in A. minutum. The Dinophyte growth was monitored for 54 h using high-frequency sampling. A. minutum presented a growth in two phases. A lag phase was observed during the first 30 h of development and had been associated with the probable temporary encystment of Dinophyte cells. Seasonal variations in fatty acid composition in several tissues of a 1-year-old population of giant lion's-paw scallop Nodipecten subnodosus were analyzed during gonad development. Samples were taken bimonthly from December 1999 to June 2000, a period in which gonad development was occurring. Fatty acid accumulation in neutral and polar lipids of the female gonad was concomitant to the gonad development and presented a maximum in June. Among essential fatty acids, a specific accumulation was observed only for 20:5n - 3 in the female gonad, as suggested by an increase in its proportion in the neutral and the polar fractions. If rays are traditionally fished for their caudal fins, the rest of the body is wasted, except part of the skin that can be transformed into leather. Liver oil of the ray, Himantura bleekeri, was characterized in terms of lipid class composition and fatty acid profile. Liver oil content was high and represented 54% of the liver weight (w/w). Neutral lipids were predominant (92%), major components being triacylglycerols (63%). Other neutral lipids identified were hydrocarbons, sterol esters, mono- and di-acylglycerols, free fatty acids, sterols and glyceryl ethers. ABSTRACT: The effect of the addition of natural antioxidants on oxidative stability of ray ( Rhinoptera bonasus) liver oil was evaluated. Different concentrations of rosemary extract, α-tocopherol, and caffeic acid (w/w) were added to the oil. Afterwards, concentration of each antioxidant that gave the highest stability was used in an accelerated stability test (Schaal method). The protective effect was established by the retention in the oil of fatty acids eicosapentaenoic (EPA) and docosahexaenoic (DHA), and concentration of volatile compounds.
