Les propriétés rhéologiques de solutions aqueuses filmogènes à base de mélanges amidons de pois hydroxypropylés de différentes masses molaires (4,7x10 4 g/mol à 1,6x10 6 g/mol) et de κ-carraghénane ont été déterminées pour des concentrations entre 25 et 30%. Plusieurs formulations ont été sélectionnées dont le comportement est proche de celui de la gélatine dans les conditions employées industriellement pour la fabrication des gélules pharmaceutiques dures. Les comportements rhéologiques des mélanges révèlent des effets de synergie entre les constituants conduisant à des augmentations importantes de la viscosité et à un renforcement des gels. The Water activity R&D project, carried out in cooperation with ONF and Vilmorin, aimed to demonstrate the effectiveness of Water Activity assessment applied to forest seeds and pollen moisture management as a replacement for moisture content assessment.Water Activity assessment is a quick and non destructive technique to qualify the kind and the chemical potential of water remaining in the sample. The growth of micro-organisms require a specific osmotic pressure, or WaterActivity(Aw), between cell walls and medium. The reactivity and depreciating ability of hydrolytic reactions, enzymes activity, lipid oxidation or biotic agents growth are dependent on Aw rather than on MC. Use of a turbidity sensor to characterize micellar casein powder rehydration: influence of some technological effects Inra

A simplified method to study rehydration of dairy powders was developed for native phosphocaseinate powder. The method involved dispersing powder in a stirred vessel equipped with a turbidity sensor under standardized conditions. The changes of turbidity occurring during powder rehydration highlighted several stages. These stages include particles wetting, and then swelling as the water penetrates into the powder bed, followed by a slow dispersion of the particles. With this tool, some technological effects on powder rehydration were analyzed. Ultrafiltrate incorporation to the casein concentrate before spray drying was found to greatly improve the rehydration, whereas mixing ultrafiltrate powder with casein powder after spray drying did not change the...
