O objetivo do presente estudo foi avaliar os amidos de milho normal, ceroso e com alto teor de amilose, fabricados pela National Starch, por meio da determinação das suas características físico-químicas, morfológicas, térmicas e reológicas. O amido de milho com alto teor de amilose (AM) apresentou teor de amilose igual a 71%, sendo que os valores obtidos para o amido de milho normal (M) e o amido de milho ceroso (AP) foram de 27,8 e 1,8%, respectivamente. Traços de proteína e lipídios foram encontrados nas amostras. O amido de milho ceroso apresentou maior viscosidade máxima e uma menor tendência à retrogradação, se comparado ao amido de milho normal. It has been hypothesized that the therapeutic effects of artepillin C, a natural compound derived from Brazilian green propolis, are likely related to its partition in the lipid bilayer component of biological membranes. Abstract The objective of this research was to evaluate the ability and efficiency of different software tools for the deconvolution of DSC thermograms of protein denaturation in salted beef. The salted samples were obtained by immersing beef pieces in NaCl solutions with concentrations of 20, 50, 100 and 330 g NaCl L-1 of water for 48 hours at 10 °C. The raw beef were used as control samples. Three software tools were considered: (i) Pyris7, (ii) OriginPro v.8, and (iii) Solver tool from MS-Excel. ABSTRACT The aim of this study was to determine if sex influenced abdominal fat yield, chemical composition, pH, color, fatty acid profile, and stability (by Differential Scanning Calorimetry - DSC) of Cobb chickens. Abdominal fat yields of 1.86 and 1.49% were obtained for females and males, respectively. Abdominal fat lipid contents of 70.68 and 74.36 g/100g, moisture content of 27.87 and 24.09 g/100g, protein content of 0.91 and 0.95 g/100g, ash content of 0.038 and 0.041 g/100g were obtained in males and females, respectively. Abstract Common beans are rich in protein and complex carbohydrates that are valuable for the human diet. Starch is the most abundant individual component; however, in its native form it has limited applications and modifications are necessary to overcome technological restrictions. The aim of this study was to evaluate the influence of oxidation, acetylation and dual-modification (oxidation-acetylation) on the physicochemical, structural and thermal properties of common bean starch. Rosa rubiginosa L. seed oil has been studied for its application in skin care products, but the chemical nature of seeds, pulp and even leaves, apart from that of oil, is also relevant with a view to the application of this weed for biodiesel production. All these vegetal materials were studied by infrared spectroscopy (FTIR) and differential scanning calorimetry (DSC) for characterisation purposes.
