Une importante biomasse algale s'échoue, chaque année, de novembre à juin, en certains endroits de la côte du Sénégal. Cette biomasse, qui n'est pas utilisée, contribue à la pollution des plages. C'est pour cela que les auteurs ont tenté, en utilisant des procédés de biotechnologie de valoriser cette biomasse par la filière biogaz-compost , la transformant en deux sous-produits : un biogaz (combustible) et un compost à usage agronomique. The strain #Rhizopus formosa$ 28422 was selected from the stock of ten strains from genera #Rhizopus$, for their capacity to attack raw cassava starch by solid substrate fermentation and showed the highest growth in this substrate. The optimal substrate composition, estimated by surface response design experiments, was 10% cassava bagasse, 10% soybean flour and 80% cassava flour. Optimal fermentation conditions were temperature, 32°C, moisture, 64%, initial pH, 6.5 and inoculum rate, 10exp6 spores/g DM. The scale-up of column fermenters by 6 to 410 gravimetric scale factors, from 10 g moist substrate size, has been achieved efficiently by maintaining heat and water balances in the media. The data on the patterns of ethanol production, biomass formation, the concentration of different carbohydrates, dry matter and pH values against time were of equal magnitude in 10- and 60-g size column fermenters. The reactors of 60-, 370- and 4100-g sizes also compared well in respect of O2 consumption, CO2 evolution and the specific growth rates in aerobic and anaerobic fermentations phases. #Lactobacillus plantarum$ strain A6 isolated from cassava, cultured on cellobiose MRS medium showed a growth rate of 0.41 h-1, a biomass yield of 0.22 g g-1, and produced simultaneously an intracellular linamarase (76.4 U g-1 of biomass) and an extracellular amylase (36 U ml-1). The synthesis of both enzymes was repressed by glucose. The use of such a strain as a cassava fermentation starter for gari production had the following influences: a change from a heterofermentative pattern observed in natural fermentation to a homofermentation, a lower final pH, a faster pH decline rate and a grater production of lactic acid (50 g kg-1 DM).
