Striated musclecytoskeleton was studied by ultrastructure and electrophoresis.Treatment of sea bass white muscle myofibrils and glycerinatedfibres with calpain caused disruption of costameres, intermediatefilaments, and Z-line, without altering sarcomeres. V8 proteasealso caused loss of costameres and Z-line, and disruptedsarcomeres without affecting the intermediate filaments.Recombinant lipase caused loss of Z-lines and also sarcolemmadetachment, without changing sarcomeres or intermediatefilaments. Influence of early postnatal cold exposure on myofiber maturation in pig skeletal muscle Inra

Early after birth, piglets rely almost exclusively on muscular shivering thermogenesis to produce heat in the cold and this can possibly modulate skeletal muscle development. An experiment involving 10 individually housed piglets was conducted to determine the influence of cold (24–15°C, D5C group) vs. thermoneutrality (34–30°C, D5TN group) between birth and 5 days on myosin heavy chain (MyHC) polymorphism and metabolic characteristics of longissimus lumborum (LL) and rhomboideus (RH) muscles. Five additional piglets were sacrificed at birth. Piglets exposed to cold received 43% more artificial milk on a liveweight basis in order to achieve similar growth rates. Après évaluation de l’importance économique de la viande de canard en France(production de 128 000 tonnes en 1993), les principales caractéristiques de cetteviande de volaille sont décrites. Le canard de Barbarie représente l’essentiel decette production, du fait d’un fort développement de ses masses musculaires etd’un engraissement moindre que le canard Pékin. La viande de canard estmaigre, comme celle du poulet (2 % de lipides dans le filet) et riche en acides graspolyinsaturés. Elle se distingue des autres viandes de volailles par sa couleurrouge. Le muscle squelettique est essentiellement composé de fibres musculaires généralement classées en fonction de leur vitesse de contraction et/ou de leur métabolisme énergétique. Les fibres musculaires se différencient essentiellement pendant les périodes embryonnaire, foetale et post-natale précoce. Un pourcentage élevé de fibres à contractions lentes et de fibres de faible diamètre semble favorable pour les qualités technologiques et organoleptiques de la viande. Au plan des performances de croissance, le nombre total de fibres musculaires, critère définitivement fixé avant la naissance, et la quantité d’ADN sont les principaux facteurs déterminant le potentiel de croissance musculaire. Cet article présente les connaissances acquises sur la physiologie des fibres musculaires en relation avec l’exercice physique chez le cheval-athlète. La vitesse et la force de contraction développée par un muscle dépendent à la fois de la quantité de fibres actives et de leurs propriétés contractiles. The objectives of the present study were to elaborate an intra-muscular profile of metabolic enzyme equipment, contractile and morphometric features along the longitudinal axis of m. semitendinosus at various ages throughout the growth phase. Thirty-seven male Montbeliard cattle, about half of them castrated, were representatively allocated to various slaughter dates, scheduled at 4, 8, 12 and16 months of age. Adult honeybee skeletal muscle fibers were enzymatically isolated from the metathoracic tibia (third pair of legs). Their electrophysiological properties were explored with the whole-cell patch-clamp technique. In a physiological-like extracellular solution, both inward and outward currents underlying an action potential activity were recorded in response to controlled membrane depolarizations from a resting potential of -80 mV. In an extracellular solution devoid of sodium but containing 2 mM calcium and the potassium channel blockers TEA and 4-AP, a current with an L-type calcium channel profile was recorded.
