Wheat bran is currently an undervalued by-product, and could be processed into food ingredients with high nutritional potential. The aim of this study was to determine the influence of bran moisture content, and the influence of sub-zero temperatures on the mechanical properties of whole bran layers and hand isolated bran tissues (outer pericarp, intermediate layer, aleurone layer), to get information on their potential breakage behavior during fractionation processes and determine the most suitable working conditions to develop efficient processes. Model-assisted analysis of tomato fruit growth in relation to carbon and water fluxes Inra

This work proposed a model of tomato growth adapted from the Fishman and Genard model developed to predict carbon and water accumulation in peach fruit. The main adaptations relied on the literature on tomato and mainly concerned: (i) the decrease in cell wall extensibility coefficient during fruit development; (ii) the increase in the membrane reflection coefficient to solute from 0 to 1, which accounted for the switch from symplasmic to apoplasmic phloem unloading, and (iii) the negative influence of the initial fruit weight on the maximum rate of active carbon uptake based on the assumption of higher competition for carbon among cells in large fruits containing more cells. L'analyse de la répartition de l'humidité sur des carottes de sondage, des planches fraîchement sciées et des placagesdéroulés de Douglas ont permis de confirmer la faible teneur en eau du duramen de cette essence. Quels que soient l'arbre et la positionradiale dans le cerne, l'humidité est de l'ordre de 30 % dans le duramen alors qu'elle atteint 80 à 150 % dans l'aubier. La reprised'humidité a ensuite été analysée sur des billons de 12 cm de long soumis à différents traitements hygrothermiques (bouillottageconventionnel, bain chaud/froid, cycles vide/pression). Seuls les traitements à base de vide et pression s'avèrent efficaces. L'humiditédu duramen varie après traitement entre 50 % et 150 %, les plus fortes valeurs étant obtenues dans le bois initial.
