Abstract Honey, produced by honeybees from nectar in flowers and plants, is an aqueous supersaturated sugar solution, mainly composed of fructose and glucose. The quality and biochemical properties of honey are related to honey maturity, production methods, processing and storage conditions, climatic conditions as well as the nectar source of the honey. In this study, 35 honey samples of different sizes and packaging all of which were sold in Istanbul were examined in terms of some physicochemical and microbiological properties. An electronic tongue system was developed based on 20 all-solid-state potentiometric sensors and chemometric data processing, with polymeric membranes applied on solid conducting silver-epoxy supports and a Ag=AgCl reference electrode. The sensor array was applied to 52 commercial honey samples obtained randomly from different regions of Portugal. The Mexican honey industry is composed by around of 40,000 honey producers with 2 million of beehives. It has been the result that Mexico is the fourth producer and exporter in the world. In the year 2004, Delicias had 14,115 beehives which produced 443.3 tons of honey with a value of 14.8 millions of Mexican pesos. The honey producers have been collected individually and rustic their honey. It has caused that intermediaries joint the honey and sell mainly to the United States marketing. The study researched the costs and returns on typical small beekeeping farms from five districts in Serbia. On the basis of the field research, data on the number of beehives, type of product, volume of production per beehive and values per measurement unit were collected. In order to demonstrate the competitiveness of various agricultural products, analysis of the available data was performed using analytical calculations. According to the analysis, the labour costs comprise about 49.65%to 64.15%of the variable costs on beekeeping farms in the Raška and Šumadija districts, respectively. An experiment was conducted to evaluate the potential of honey, propolis, and bee pollen for the reversal of lipid peroxidation induced by tebuconazole (TEB) in South American catfish (Rhamdia quelen), in which the concentration of thiobarbituric acid reactive substances (TBARS), the activity of the antioxidant enzyme glutathione-S-transferase (GST) and the concentrations of non-enzymatic antioxidants, reduced glutathione (GSH), ascorbic acid, and non-protein thiols were assessed. The antioxidant activity of Portuguese honeys was evaluated considering the different contribution of entire samples and phenolic extracts. Several chemical and biochemical assays were used to screen the antioxidant properties of entire honeys with different colour intensity and phenolic extracts: reducing power, 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical-scavenging capacity, and inhibition of lipid peroxidation using the b-carotene linoleate model system and the thiobarbituric acid reactive substances (TBARS) assay. Honey has always been regarded as a food which is advantageous for one’s health and as a product which has healing qualities. For this reason, is necessary to protect consumers from the fraudulent mislabeling of inferior honeys. Thirty-five natural honey samples from three apicultural regions of the state of Minas Gerais, Brazil, were collected from honeybee hives under various climatic conditions over a two-year period. The beehives were located in the districts of Bom Jesus do Amparo, Barão de Cocais and São Gonçalo do Rio Abaixo, all within a 100 km radius of Belo Horizonte, Minas Gerais, Brazil.
