This study uses the Life Cycle Assessment (LCA) methodology to evaluate and compare the environmental impacts caused by both the artisanal and the industrial manufacturing processes of "Minas cheese". This is a traditional cheese produced in the state of Minas Gerais (Brazil), and it is considered a "cultural patrimony" in the country. The high participation of artisanal producers in the market justifies this research, and this analysis can help the identification of opportunities to improve the environmental performance of several stages of the production system. ABSTRACT L-asparaginase (EC 3.5.1.1) is an enzyme that catalysis mainly the asparagine hydrolysis in L-aspartic acid and ammonium. This enzyme is presented in different organisms, such as microorganisms, vegetal, and some animals, including certain rodent's serum, but not unveiled in humans. It can be used as important chemotherapeutic agent for the treatment of a variety of lymphoproliferative disorders and lymphomas (particularly acute lymphoblastic leukemia (ALL) and Hodgkin's lymphoma), and has been a pivotal agent in chemotherapy protocols from around 30 years. Almost one third of the worlds annual fish catch is used for processing into fish meal and oil. Peru and Chile are the main fish meal producing countries and they lead its commerce. Fish meal can be produced from any fish or shellfish, but fish offal from the consumption industry and the called 'Industrial fish' are mainly used. In finfish mariculture, seed production and larval rearing still form the bottleneck for all ongrowing operations and are considered as the main limiting factor for industrial development. Through trial and error more than through biological understanding two opposite hatchery techniques have been developed which surprisingly control a multiparametric combination of different factors but aspire to the same objective of conformity with wild standards and the cost-effective production of larvae.
