Chemical and Fatty acid composition of different cuts cooked or uncooked from yearling bulls fed oil sources Animal Sciences
Oliveira, Emanuel Almeida de; Sampaio, Alexandre Amstalden Moraes; Henrique, Wignez; Pivaro, Thiago Martins; Rosa, Bruna Laurindo; Fernandes, Alexandre Rodrigo Mendes.
This study evaluated the chemical and lipid composition of uncooked or cooked loin (Longissimus thoracis) and rump (Biceps femoris) in samples of 2.54 cm thick from 35 carcasses of Nellore young bulls finished in feedlot for 96 days and slaughtered at an average weight of 532.17 ± 30.25 kg and 24 months of age. The rump had the lowest level of protein and ash (18.57 and 0.90%, respectively) and the highest level of ether extract compared to loin (3.37 and 1.90%, respectively). Higher levels of cholesterol were found in rump compared to loin (40.91 e 30.93 mg 100 g-1, respectively). The uncooked loin showed lower content of saturated fatty acids and higher content of polyunsaturated fatty acids. The best values for the omega-6: omega-3 ratio was observed in...

Effects of ractopamine plus amino acids on growth performance, carcass characteristics, meat quality, and ractopamine residues of finishing pigs Ciencia e Investigación Agraria
Elmes,Claudia A; Bustamante,Ociel H; González,Fernando G; Larraín,Rafael E; Gandarillas,Mónica.
The aim of the study was to evaluate the effects of adding ractopamine (RAC) and amino acids (AA) to the diet on growth performance, carcass characteristics, commercial cuts yield, meat quality and residues in liver and muscle. Ninety-two crossbred castrated pigs (97.96 ± 2.32 kg) were randomly assigned to one of two dietary treatments: a Control diet with 0 mg kg-1 of RAC and a RAC+AA diet with 10 mg RAC kg-1, for the last 27 days. Pigs of RAC+AA group had greater average daily gain (ADG), gain to feed ratio (G:F) and final bodyweight (P≤0.05) and tended to have lower average daily feed intake (ADFI) (p=0.084) than Control pigs. Carcasses from RAC+AA animals were heavier than controls (P≤0.05). Dressing percentage and backfat depth...

Feedlot performance, feed efficiency and carcass traits in Nellore cattle selected for postweaning weight R. Bras. Zootec.
Lucila Sobrinho,Tatiana; Bonilha,Sarah Figueiredo Martins; Gonçalves,Heraldo Cesar; Castilhos,André Michel de; Magnani,Elaine; Razook,Alexander George; Branco,Renata Helena.
The objective of this study was to evaluate the correlated responses to selection for growth in feed efficiency and carcass traits of Nellore animals. A total of 121 animals of the Nellore control (NeC) and selection herds were subjected to performance testing and classified regarding residual feed intake (RFI). Sixty-seven of these animals were selected and finished until reaching 4 mm of subcutaneous fat thickness between the 12th and 13th ribs. The animals were slaughtered at a mean age of 541 days and mean live weight of 423 kg for NeS and of 363 kg for NeC, and carcass traits were measured. Animals in NeS presented higher initial and slaughter weights, dry matter intake, hot and cold carcass weight, weight of retail cuts, and carcass yield than NeC...

Performance and carcass quality of feedlot- or pasture-finished Nellore heifers according to feeding managements in the postweaning phase R. Bras. Zootec.
Casagrande,Daniel Rume; Azenha,Mariana Vieira; Vieira,Bruno Ramalho; Resende,Flávio Dutra de; Faria,Marcelo Henrique de; Berchielli,Telma Teresinha; Ruggieri,Ana Cláudia; Reis,Ricardo Andrade.
The objective of this study was to evaluate the postweaning history of heifers kept on marandu grass pastures with three canopy heights, in a continuous-grazing system, during the rainy period, on feedlot- or pasture finishing. The effects of three canopy heights (15, 25 and 35 cm) associated with two supplements (mineral salt and protein-energy supplement) and two finishing systems in the dry period (feedlot and open pasture) were studied in the postweaning period during the rainy season. The adopted design was completely randomized, with seven replications (animals) in a 2 × 2 factorial arrangement. The animals which received protein-energy supplement reached the finishing period with greater body weight in relation to those fed mineral salt. In both...
