Five species of edible mushrooms, Lentinula edodes, Pleurotus ostreatus, Pholiota nameko, Macrolepiota bonaerensis and Agaricus blazei, were tested for their potential to inhibit the in vitro growth of the pathogenic yeast Candida albicans. Only L. edodes had a fungistatic effect on this human pathogen. The inhibitory compound was produced intra and extracellularly in submersed L. edodes culture, and was also present in fresh and dehydrated mushroom basidiocarps. The fungistatic compound was heat sensitive and lost activity after 72 hours. |

The antimicrobial activity and mineral composition of shiitake mushrooms were evaluated in four isolates of Lentinula edodes. Mushrooms were cultivated on artificial logs, based on eucalyptus sawdust enriched with 20% rice, wheat, or soybean bran, or combination of 10% of two of these supplements. The substrates were humidified with a 0.1% mate tea extract or water. Logs of Eucalyptus grandis were also used to cultivate the shiitake mushrooms. Many studies have drawn attention to the occurrence and concentration of toxic elements found in the fruiting body of mushrooms. Some edible mushroom species are known to accumulate high levels of inorganic contaminants, mainly cadmium, mercury, and lead. There are about 2,000 known edible mushroom species, but only 25 of them are cultivated and used as food. The chemical composition and biological properties of Portuguese wild mushrooms (Cantharellus cibarius, Hypholoma fasciculare, Lepista nuda, Lycoperdon molle, Lycoperdon perlatum, Ramaria botrytis, Tricholoma acerbum) were evaluated in order to assess these products as sources of nutrients and nutraceuticals. The analyzed mushrooms contain very useful phytochemicals such as phenolics, tocopherols, ascorbic acid, and carotenoids. Mushrooms represent an unlimited source of compounds with antitumor and immunostimulating properties and mushroom intake as been shown to reduce the risk of breast cancer. A large number of LMW (low molecular weight) compounds present in mushrooms have been identified including: phenolic acids, flavonoids, tocopherols, carotenoids, sugars and fatty acids. Avaliou-se a densidade básica da madeira e casca de sete espécies (E. saligna, E. grandis, E. urophylla, E. camaldulensis, E. citriodora, E. paniculata e E. pellita) e três clones de eucalipto (híbridos de E. grandis x E. urophylla) antes e durante o cultivo das linhagens LE-95/01 e LE-96/18 de shiitake (Lentinula edodes) em toras. The effects of processing and cooking practices on the chemical composition and antioxidant activity of Portuguese wild edible mushroom species (Lactarius deliciosus, Macrolepiota mastoidea, Macrolepiota procera, and Sarcodon imbricatus) were investigated. Dried, frozen, and cooked samples were analyzed for proximate constituents (moisture, fat, crude protein, ash, and carbohydrates) and nutritional value. During the first half of 2008, a researching study was done through interviews for some purchase department employees of selected supermarkets, as well as the people that acquire mushrooms “Pleurotus Ostreatus” and other edible mushrooms in Mérida, Yucatán. This study was done with the purpose of identifying their consumer behavior, consumption and to understand how the product is perceived in the supermarket shopping area. The radical scavenging capacity was evaluated through hydrogen atom transfer and single electron transfer reaction-based assays: DPPH radical scavenging activity and reducing power, respectively. The mushroom Pleurotus ostreatus has nutritional and medicinal characteristics that depend on the growth substrate. In nature, this fungus grows on dead wood, but it can be artificially cultivated on agricultural wastes (coffee husks, eucalyptus sawdust, corncobs and sugar cane bagasse). The degradation of agricultural wastes involves some enzyme complexes made up of oxidative (laccase, manganese peroxidase and lignin peroxidase) and hydrolytic enzymes (cellulases, xylanases and tanases). Este trabalho avaliou a influência da ração semi-purificada, suplementada com o cogumelo Agaricus brasiliensis no perfil de lipídios, em ratos. Temperature is one of the main factors affecting mushrooms development and introduction in new areas. Effects of temperature (15ºC and 28ºC) and luminosity (120 and 900 lux) were evaluated for eight P. ostreatus strains in relation to precocity, yield, pileus area, stalk formation pattern, coloration and handling resistance. Genetic variability of strains was analysed by the Random Amplified Polymorphic DNA (RAPD) method. The Pos 98/37 strain was the only to yield white pileus at 28ºC - 900 lux, and grey ones at 15ºC and 120 lux. Four new species of Hohenbuehelia (Fungi: Pleurotaceae) are described in the group of Hohenbuehelia atrocoerulea and Hohenbuehelia grisea. Hohenbuehelia algonquinensis, found on Pinus in Ontario, Canada, may be distinguished macroscopically from bluish collections of H. atrocoerulea and watery grey-brown collections of H. grisea by its coal-black pileus.
