A nutrient density standard for vegetables and fruits: nutrients per calorie and nutrients per unit cost Inra
Darmon, N.; Darmon, M.; Maillot, M.; Drewnowski, A..
Objectives: The Dietary Guidelines for Americans 2005 recommended that consumers give priority to nutrient dense foods, those that contain substantial amounts of key nutrients in relation to the dietary energy they provide. This study developed a scoring system to estimate the nutritional adequacy of vegetables and fruits, on a per weight, per calorie, and per unit cost basis. Data: we used a French national food composition database for 637 foods, including 129 vegetables and fruits. Mean national retail prices were obtained for each food. Methods: The nutrient adequacy score was defined as the mean of percent daily values for 16 nutrients, based on 100 g of food. The nutrient density score and the nutrient to-price ratio were the mean of percent daily...

Dry processes to develop wheat fractions and products with enhanced nutritional quality Inra
Hemery, Y.; Rouau, X.; Lullien-Pellerin, V.; Barron, C.; Abecassis, J..
Numerous epidemiological studies have investigated the potential health benefits of consuming more wholegrain foods. However, in Europe, most wheat-based food products are made with refined endosperm from which the germ and peripheral layers (bran) are excluded, although these tissues have considerable nutritional potential and contain most of the micronutrients, phytochemicals and fibre of the grain. Dry fractionation technologies allow these peripheral tissues to be separated and recovered to efficiently separate valuable from detrimental components (i.e. contaminants, antinutrient compounds, irritants), in order to develop nutritionally enhanced ingredients and products. The rational development of efficient processes requires the ability to monitor the...

Linear programming can help identify practical solutions to improve the nutritional quality of food aid Inra
Rambeloson, Z.J.; Darmon, N.; Ferguson, E.L..
Objectives: To assess the nutritional quality of food aid delivered by food banks inFrance and to identify practical modifications to improve it.Design: National-level data were collected for all food aid distributed by Frenchfood banks in 2004, and its nutrient content per 2000 kcal was estimated andcompared with French recommendations for adults. Starting with the actualdonation and allowing new foods into the food aid donation, linear programmingwas used to identify the minimum changes required in the actual donation toachieve the French recommendations. Results: French food-bank-delivered food aid does not achieve the Frenchrecommendations for dietary fibre, ascorbic acid, vitamin D, folate, magnesium, docosahexaenoic acid, a-linolenic acid and the...
