This research was conducted to evaluate the agronomic characteristics and chemical composition of Gliricidia sepium (Jacq.) Steud grown under different residual heights in different seasons. The experimental design used was a complete randomized block in a split-plot. The plots consisted of three residual heights (70, 90 and 110 cm), and the subplots were four seasons (fall, winter, spring and summer) with four replicates. There was no (P>0.05) interaction between season and residual heights for agronomic characteristics. However, these features were influenced by the cutting season, with no significant effect (P>0.05) on residual height. Significant effects (P<0.05) were observed for dry matter, mineral matter, acid detergent fiber and... |

Abstract: The apparent digestibility coefficients (ADC's) of dry matter (DM), crude protein (CP), and gross energy (GE) of conventional feedstuffs (cottonseed meal-CSM, soybean meal-SBM, wheat bran-WHB, corn-COR) and regional alternative feedstuffs (common bean residue meal-CBR, mesquite meal-MES, pasta by-product meal-PBM) were determined for hybrid juvenile tambacu Colossoma macropomum × Piaractus mesopotamicus. The apparent DM and GE digestibility of feedstuffs decreased (p<0.05) as fiber content of the ingredients increased. No differences (p>0.05) were found among ADC's of PBM and COR. The lowest CP ADC among energy sources was observed in MES; the lowest CP ADC among plant protein sources was observed in CBR. Information about the ADC's of... |

Abstract Fish consumption is low in Brazil and several factors justify this fact, among them the lack of practicality in preparation. Thus, this study aimed to investigate the relation between the price and the nutritional characteristics of the processed fish products. Correlations between price and nutritional value of 18 different processed fish products were established, comparing nutritional parameters between in natura and processed fish. The results showed that protein features moderate positive correlation to price. The processed fish products analyzed showed lower protein content and higher contents of energy, lipids and sodium compared to in natura fish. |

The chemical composition, antioxidant potential and antimicrobial activity were studied in six walnuts (Juglans regia L.) cultivars (cv. Franquette, Lara, Marbot, Mayette, Mellanaise and Parisienne) produced in Portugal. Concerning their chemical composition the main constituent of fruits was fat ranging from 78.83% to 82.14%, being the nutritional value around 720 kcal per 100 g of fruits. Linoleic acid was the major fatty acid reaching the maximum value of 60.30% (cv. Lara) followed by oleic, linolenic and palmitic acids. The aqueous extracts of walnut cultivars were investigated by the reducing power assay, the scavenging effect on DPPH (2,2-diphenyl-1-picrylhydrazyl) radicals and b-carotene linoleate model system. All the walnut extracts exhibited... |

It was evaluated the addition of calcium oxide (0; 0.5; 1.0; 1.5; and 2.0% of dry matter) effect on the chemical composition and ruminal degradability of the dry matter and neutral detergent fiber, on the losses of dry matter, and on the microbial population in sugar cane silages. A design with five levels of calcium oxide and three replications was used. All the variables were influenced by the addition of calcium oxide in the silages, except the composition in acid detergent insoluble protein, water soluble carbohydrates and lignin. The dry matter content and pH linearly increased while the contents of organic matter, hemicellulose and crude protein linearly decreased with the levels of calcium oxide. Neutral detergent fiber corrected for ashes and... |

ABSTRACT: Vegetable oils have been used to substitute pork backfat to improve the fatty acid profile of fermented sausages. The aim of this study was to assess the chemical composition, microbiological properties, and fatty acid profile of Italian-type salami with pork backfat substituted (15% and 30%) by emulsified canola oil. Fat contents decreased while moisture contents increased in Italian-type salami with emulsified canola oil. The growth of lactic acid bacteria in salami was not affected by canola oil and absence of fecal coliforms, coagulase-positive staphylococci, and Salmonella were reported during processing of fermented sausages. Lower levels of saturated fatty acids (SAFAs), higher levels of monounsaturated fatty acids (MUFAs) and... |
