One of the fastest growing sectors in food service industries is that of frozen foods. Beside the volume, the effective management of interdependent operations regarding the production, storage, distribution and retailing of frozen foods ("the cold chain") is a key factor of success and a must for preserving the safety and quality of frozen foods. Angesichts des steigenden Verpackungsmüllaufkommens und der zunehmenden Umweltverschmutzung durch Plastik ist ein Trend zu unverpackten Lebensmitteln und Zero-Waste-Produkten in Deutschland erkennbar. Nicht nur spezialisierte unverpackt-Läden, sondern auch Bio-Supermärkte bieten inzwischen lose und unverpackte Ware an. Eine explorative Kundenbefragung analysiert die Akzeptanz, Nutzung und Bewertung von unverpackt-Abteilungen in zwei Filialen zweier Biosupermarktketten in Berlin. Antimicrobial effect of 4 formulations from 8 plants after storage for > 1 year at -18°C Organic Eprints

This report documents the storage stability at -18°C for more than 1 year for 4 different formulations made from 8 selected plants. The formulations are: "raw, blended"; "blended and pasteurised at 92°C"; "freeze-dried powder" and "oven-dried powder". The antimcrobial effect was tested in a broth based lab test system using 3 different bacteria (salmonella, E. coli and L. monocytogenes). In general the antimicrobial effect was preserved for more than one year (up to 1,5 year) for all formulations.

Among consumers there is a growing demand for food products with a natural nutritional-physiological advantage over comparable conventional products. As part of an EU funded project, ALP is examining the possible impact of processing on nutritionally valuable milk components, using the example of conjugated linoleic acids (CLA).
