Avaliação da influência da época do ano na maturação de queijo minas artesanal do Serro. Repositório Alice

O objetivo deste trabalho foi avaliar a influência das épocas do ano (verão chuvoso e inverno seco) na maturação de queijos Minas Artesanais do Serro produzido com leite cru. Foram sorteadas cinco, de 32 propriedades rurais produtoras do Município do Serro, para coletar as amostras e analisar. Foram realizadas as seguintes análises: acidez titulável, pH, gordura, umidade, resíduo mineral fixo e cor. Também foram realizadas contagem de Coliformes totais e termotolerantes, bactérias láticas, micro-organismos aeróbios mesófilos, Staphylococcus spp. e de Bolores e leveduras. Caracterização de frutos de progênies de meios-irmãos de maracujazeiro-amarelo em Rio Branco-Acre. Repositório Alice

O presente estudo teve como objetivo avaliar e caracterizar 39 progênies de meios-irmãos de maracujazeiro-amarelo para subsidiar o programa de melhoramento genético desta cultura. O delineamento experimental foi em blocos casualizados, com 39 tratamentos (39 progênies de meios-irmãos), com 2 repetições e 5 plantas por parcela. As avaliações foram feitas no segundo ano de produção. As características avaliadas foram: comprimento e diâmetro do fruto, relação comprimento/diâmetro, massa do fruto, da casca e da polpa, rendimento da polpa (arilo + sementes), espessura da casca, acidez titulável, teor de sólidos solúveis e relação sólidos solúveis /acidez titulável. Determination of tocopherols and physicochemical properties of faveleira (Cnidoscolus quercifolius) seed oil extracted using different methods Ciênc. Tecnol. Aliment.

Abstract This study aims to evaluate the physicochemical properties and tocopherol content in faveleira seed oil extracted using three methods (Bligh-Dyer, Soxhlet extractor, and cold-pressing). Each of the methods generated different yield percentages, with cold-pressing producing the least amount of oil. However, the cold-pressing method produced better quality oil with more desirable properties, including low acidity (1.56 ± 0.01% oleic acid) and low peroxide value (0.45 ± 0.09 mEq/1000 g). Cold-pressing resulted in higher quantities of tocopherols: 0.59 ± 0.12 mg/100 g of alpha-tocopherol and 20.97 ± 1.15 mg/100 g of beta + gamma-tocopherol. Twenty hair (Pelibuey x Katadin x BlackBelly) and 20 wool (Rambouillet x Criollo) lambs were fattened in an intensive feeding system to reach 40kg body weight at ten months of age. The yield of lamb sides and back fat (51.9%, 2.5mm vs. 47.0%, 2.3mm) were greater in wool lambs. Meat pH was not different between phenotypes but meat temperature was higher during the first hours postmortem in wool lamb sides (27, 23, and 20, vs. 24, 20, and 17ºC). Protein content in meat from the neck (braquicephalic and esternocephalic muscles) and loin (Longissimus lumborum muscle) were higher in hair lambs (21.1 and 20.4 vs. 19.7 and 19.3 %), while moisture of the same muscles was higher in wool lambs (75.6 and 75.9 vs. 73.6 and 74.3%). Samples of ketchup available on the Brazilian market, one traditional (sweetened with sucrose) and three light versions (sweetened with aspartame, acesulfame-K and a blend of cyclamate, saccharin and stevia) were evaluated for their physicochemical characteristics and sensory profile (Quantitative Descriptive Analysis). Four main groups of attributes were generated: appearance, oral texture, aroma and flavor. The samples presented significant differences in all attributes, except for syneresis and overripe tomato flavor. ABSTRACT The aim of this study was to investigate whether produced kefir meets the identity and quality standards for fermented milks, to check the possibility of assigning a nutrition declaration, and to evaluate the antagonistic activity of the fermented milk against Staphylococcus aureus and Escherichia coli. Two different formulations of kefir (Kefir 1 and Kefir 2) were prepared to determine the percentage composition, minerals, pH, total lactic acid bacteria, and antagonistic activity against Staphylococcus aureus and Escherichia coli. Physicochemical characteristics and fatty acid composition of tomato seed oils from processing wastes Scientia Agricola

The major component of tomato processing industry wastes is seed. Samples of tomato (Petomech var.) pomace from industries of São Paulo state submitted to Hot and Cold Break treatments, were spontaneously fermented and washed to separate seeds. The oils were analysed for specific gravity, iodine and saponifícation numbers, refractive index, viscosity and fatty acid composition. Except for saponifícation number, Hot and Cold Break seed oils were very similar. In both treatments palmitic acid was the major saturated fatty acid, followed by stearic acid. Linoleic acid was the major unsaturated fatty acid followed by oleic acid. Both oleic and linoleic acids added up to over 60% of total fatty acids, being higher in Cold Break seed oils. The aimed of this work was to investigate the effects of maturity stages on the physicochemical characteristics of bilimbi (Averrhoa bilimbi L.) which were cultivated in Recife-PE. During one year, the fruits were harvested from five different trees (unidentified variety) in mature and half-mature stages. They were analysed on total soluble solids (TSS), oxalic acid and vitamin C. Ripe fruits had the highest levels of TSS and vitamin C and lowest levels of oxalic acid, independently of weather conditions. The results showed that maturity stage influenced on physicochemical characteristics of bilimbi fruits.

Abstract The effluent from the potato chips processing could be recovered and used in the biscuit formulations. This study aimed to evaluate the changes of sweet biscuits with partial replacement (45%) of wheat flour by recovered potato starch, packed in biaxial oriented polypropylene (BOPP), and stored under two controlled temperatures (25°C and 35°C). The changes of physical, chemical, microbiological and sensory characteristics of biscuits were evaluated for 6 months. Completely randomized design with 2x6 factorial arrangement was employed.
