Characterization of factors determining the consumption of pork in the Metropolitan Area of the Valley of Mexico R. Bras. Zootec.

ABSTRACT The objective of the present study was to learn the characteristics that affect pork meat consumption in the Valley of Mexico Metropolitan Area. Qualitative regression models (Logit and Probit) were used, and a survey of 440 consumers was carried out. The results showed that the sample of pork consumers was made up mostly of women (91.1%) aged between 30 and 59 years and families consisting of three or four persons. The variables that condition the consumption of this type of meat are the number of members in the family, generalized chicken meat consumption, level of household income, price of the product, and illnesses that restrict its consumption. Comparision of the BAX® System with an in-house MSRV method for the detection of Salmonella in chicken carcasses and pork meat BJM

A study was performed to compare the analytical procedure of the BAX® System for Salmonella PCR assay with the Modified Semi-Solid Rappaport-Vassiliadis (MSRV) method, for the detection of Salmonella in naturally contaminated chicken carcass samples (n = 762) and raw pork meat (n = 566). The chicken carcasses samples were collected during slaughtering after defeathering or immediately after evisceration and the raw pork meat collected from the deboned head of recently slaughtered pigs and others deboned raw fresh pork meat. The BAX® System detected 134 Salmonella-positive samples in chicken carcasses and 145 samples in pork meat, while the MSRV method isolated 142 and 144 Salmonella-positive samples, respectively. This study aimed to identify the determinants of the Pará de Minas pork meat chain competitiviness as well as suggest actions to improve it. The chain analysis was based on the Silva e Batalha (1999) methodology, and it was extended by the development of a S.W.O.T. analysis. The main chain strengths were related to the presence of cooperatives and a well developed communication infrastructure. However, its main weaknesses were related to the low level of farmer’s collective production sell, and lack of cooperative culture among farmers. Detection of Toxoplasma gondii by PCR and mouse bioassay in commercial cuts of pork from experimentally infected pigs Arq. Bras. Med. Vet. Zootec.

The distribution of T. gondii in commercial cuts of pork (ham, tenderloin, spareribs and arm picnic) by PCR and bioassay from experimentally infected pigs, was evaluated. Eighteen mixed breed pigs were divided into two groups (G). The G1 animals (n=10) were infected with 4 x10(4) oocysts of the T. gondii VEG strain and the G2 animals (n=8) were used as control. Pigs of both groups were slaughtered at 59th day after infection, and meat samples were collected for bioassay and PCR. All animals from G1 were positive by at least one or both tests, and all control animals were negative. The objective of this paper is to analyze the production shares of the main Brazilian states (Minas Gerais, São Paulo, Paraná, Santa Catarina, Rio Grande do Sul, Mato Grosso do Sul, Mato Grosso and Goiás) in the national production of inspected and total pork meat in the period from 2000 to 2006. The analysis considered the evolution of the production in terms of the regional effects, and indicators of the technical evolution of the production. The most important aim of authors’ study is to get to know the Hungarian pork consumption in our days. Our aim is set to estimate pork meat consumption and purchasing habits of consumers who are living in Eastern part of Hungary. The pork section is influenced negatively by several factors nowadays, which have a clear effect on the pork consumption and cause its declination.
