Accumulation and extractability of grape skin tannins and anthocyanins at different advanced physiological stages Inra

Quantitative and qualitative modifications of tannins and anthocyanins in grape skin were investigated at different dates of harvest, from berries sorted on the basis of their density. Free anthocyanins accumulated until 170 g/L of sugars in pulp before undergoing a slight decrease. Changes in anthocyanin composition were observed with increasing sugar levels in the pulp that reflected structural differences between classes of anthocyanins. The proportion of methoxylated anthocyanins continued to increase in the skin as sugar accumulated while the proportion of coumaroylated anthocyanins initially increased (up to 200 g/L of sugars in the pulp) and then rapidly decreased. Characterisation of highly polymerised prodelphinidins from skin and flesh of four cashew apple (Anacardium occidentale L.) genotypes Inra

Tannins were extracted by acetone/water 60:40 from skin and flesh of four cashew apple genotypes from Brazil and Benin (West Africa), and separated from monomeric phenols. Tannins were submitted to acid-catalysed degradation in the presence of phloroglucinol and the products were analysed by HPLC-DAD/ESI-MS. Both skin and flesh tannins contained high percentages of (-)-epigallocatechin and (-)epigallocatechin-O-gallate, followed by minor quantities of (-)-epicatechin and (-)-epicatechin-3-O-gallate; 100% of the compounds were the 23-cis configuration. Effect of macerating enzymes on the polyphenol and polysaccharide composition of Merlot wines after 20 months of ageing was studied over three vintages (2004, 2005, 2006). Pectinase rich enzyme preparations, by degrading grape berry cell walls, led to a modification of the molecular weight distribution of polysaccharides released into the wines. Enzyme-treated wines contained more Rhamnogalacturonan II (RG-II) and less polysaccharides rich in arabinose and galactose (PRAGs) over the three vintages. The enzyme treatment also modified wine polyphenol composition. Les effets de l’espèce et des conditions écologiques sur le contenu du duramen externe de dix ellagitanins (vescaline, castaline, roburines A à E, grandinine, vescalagine, castalagine) et de l’acide ellagique ont été étudiés dans un peuplement équien (100 ans) de chêne d’une surface de 5 ha située dans l’ouest de la France (forêt domaniale de La Petite Charnie, Sarthe). L’échantillon total se composait de 286 arbres (118 chênes sessiles, 158 chênes pédonculés et 10 chênes intermédiaires) répartis en mélange dans trois zones écologiques du peuplement (plateau, pente et fond de vallon). Inhibition of grape seed tannin aggregation by wine mannoproteins: effect of polysaccharide molecular weight Inra

Polysaccharides are important in colloidal stabilization-destabilization phenomena. In a previous study, three different trends were observed upon addition of wine polysaccharides to procyanidin suspensions: rhamnogalacturonan II monomers had no impact, the MPO mannoprotein fraction strongly inhibited aggregation, and rhamnogalacturonan II dimers increased aggregation. After molecular weight fractionation of MPO mannoprotein, the molecular weight effect on polyphenol particle size was investigated. Interactions of proline-rich proteins (PRPs) with flavan-3-ols was studied using poly(L-proline) as a model protein by means of isothermal titration calorimetry (ITC). Several parameters were varied: (i) the galloylation and B-ring trihydroxylation of the flavan-3-ols (catechin, epicatechin, epicatechin gallate, and epigallocatechin gallate) and (ii) the degree of polymerization (monomers were compared to a mixture of oligomers with average degree of polymerization of 3.85). Large differences were observed between the flavan-3-ol monomers: no enthalpy change was measured when catechin and epicatechin were titrated by poly(L-proline), whereas thermodynamic parameters were determined in the case of galloylated monomers and mixture of oligomers. In the first part of this work, the analysis of the polyphenolic compounds remaining in the wine after different contact times with yeast lees during simulation of red wine aging was undertaken. To achieve a more precise view of the wine polyphenols adsorbed on lees during red wine aging and to establish a clear balance between adsorbed and remnant polyphenol compounds, the specific analysis of the chemical composition of the adsorbed polyphenolic compounds (condensed tannins and anthocyanins) after their partial desorbtion from yeast lees by denaturation treatments was realized in the second part of the study. Phenolic reactions during winemaking and aging Inra

The reactivity of polyphenols is due to the position of the hydroxyl groups on their aromatic nuclei. Ortho-hydroxyl groups promote oxidation while meta-hydroxyl groups induce electrophilic aromatic substitution. Both hydroxylation patterns are encountered in flavonoid structures, on the B and A rings, respectively. In addition to oxidation and electrophilic aromatic substitution, flavonoids undergo nucleophilic addition on the central C ring when it is positively charged. Reactions of the A and C rings are pH-dependent. The A ring of flavonoids undergoes a polycondensation reaction mediated by an aldehyde. Selection for small amounts of hydrolysable tannins by a concentrate-selecting mammalian herbivore Inra

Although herbivores usually avoid plants with high concentrations of tannins, roe deer in natural habitats select tannin-rich plants. We tested the hypotheses that: (H1) roe do not seek tannins, rather they select for other (unmeasured) factors such as minerals or vitamins; and (H2) roe do select for tannins. Tame roe deer were offered a choice of food pellets to which hydrolyzable chestnut tannins had been added or control pellets. The daily consumption of pellets containing a high level of tannins (9.1%) was lower than consumption of control pellets. However, when offered medium level tannin pellets (3.8%), roe deer ate more tannin than control pellets. Moreover, the roe regulated their intake of these tannins closely. Variabilités géographique, sylvicole et individuelle de la teneur en extractibles de chênes sessiles français (Quercus petraea Liebl.) : polyphénols, octalactones et phénols volatils Inra

Le matériel expérimental est constitué de 82 chênes sessiles (ou rouvres) issus de 48 parcelles de futaie ou taillis-sousfutaieréparties dans 5 zones géographiques françaises (Convention ONF-INRA 1992-1996 « Sylviculture et Qualité du bois de chêne(chêne rouvre) »). Pour chacun des arbres, deux extractions ont été réalisées sur les 15 premiers cernes du duramen de deux rayonsopposés situés à 1,30 m de la base de l’arbre. La densité optique à 280 nm (qui pour le type d’extraction réalisé est très corrélée à lateneur en tannins), les méthyl-octalactones et des phénols volatils (dont l’eugénol) ont été dosés.
